Elwood made something new for dinner tonight and I think it will stay in the rotation: pasta alla Brontese. I am sharing an approximate version for anyone who gets paywalled.
Cook up a box of fettuccini, and sauce it like so: first, take toasted pistachios and blitz them to rubble with Parmesan. Crisp up some nice fatty pork (we rarely have pancetta on hand, which is what the recipe calls for, but always have bacon, which works just fine) and cook some onion in the fat. Cook down some wine in the oniony fat and add heavy cream. Combine, and eat while making happy noises.
Would a cardiologist approve? Perhaps not. Am I going to keep it in the rotation anyway, because "moderation in all things" also applies to bacon and heavy cream? Yes indeed I am.
