Half a pound of tomatillos in this week's CSA pile, and they dove bravely into the food processor to meet their fate. They were joined there by a clove of garlic, and a baby onion (maybe the equivalent of an eighth-sized wedge of an ordinary onion), and the leaves from a small bunch of basil, and a hot pepper, and a quarter-teaspoon or so of salt. This is based on a Crescent Dragonwagon recipe that called for cilantro instead of basil, but all of my cilantro has bolted and I had basil sitting wistfully in the crisper drawer.
Verdict: yes, please. I made it as a relish-y thing to serve atop calamari, but after dinner one of the boys said, "Could you just leave the salsa out so I can keep eating it, maybe with chips?" Yes indeed, I said, because I'm pretty sure the organic tomatillo part cancels out the pile of chips part.
