Hi Jamie, I've been lurking since I got your Christmas card. Not much of a talker as it is but even less with writing!
Anyway, I read some of your back posts and I get the impression that you like spinach? haven't tried this recipe yet but I though you'd like it:
Savory Spinach Balls
2 10 oz package of frozen chopped spinach, thawed
1 cup grated Parmesan cheese
1 cup liquid egg substitute*
2 eggs, beaten
4 TBS butter, melted
2 TBS chopped fresh parsley
2tsp Italian seasoning, crushed
1 tsp garlic powder
3/4 tsp salt
3 cups whole wheat bread crumbs (about 3 slices of bread)
Preheat oven to 350. Line a baking sheet with foil and lightly coat with cooking spray.
drain spinach to remove most of the liquid. Transfer to a medium bowl. Add cheese, egg substitue, eggs, butter, parsley, seasoning, garlic powder and salt. Mix well. Stir in the bread crumbs and season to taste with pepper.
Divide the mixture into 48 balls and place on the baking sheet. Lightly coat the balls with cooking spray.
Bake for 10 min or until lightly browned. Serve warm or at room temp. alone or with marinara sauce for dipping.
*Not sure about the egg sub. I'm wondering if another egg would work or leave it out altogether.

Hi, Jamie! So much time has gone by since I first found your blog. I was single, still in college, and knew nothing about homebirthing or extended breastfeeding at the time. Now I'm married and have a 17 month-old son and even less intention of weaning right now than he has. And I'm more interested than ever in having a baby at home. (Didn't work out the first time, but who knows what God has in store for us?) All this is just to say: thank you. I've learned a lot from you.

I use Google Reader and I debated (at every subsequent post) whether I could get past it. My reaction shocked me for lots of reasons. Anyway, hello, I'm de-lurking. I'm not a lurker and I am a day late with this (I was in bed with strep yesterday) but I am saying hello nonetheless. I am impressed at your resolve to pray 20 decades of the rosary every day!
